Fun Fall Treats!

Fall is in its prime and what better way to spend it then by making these delicious seasonal treats.

Pumpkin Chocolate Chip Cookies

Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour

Cream Cheese Frosting

  • ½ cup unsalted butter (softened)
  • 8 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Steps:

  1. Preheat oven to 350 F degrees. Cover a large cookie sheet with parchment paper and set aside.
  2. In a large bowl, beat butter with an electric mixer or whisk for 1 minute. Add sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice and beat until well mixed.
  3. Add one egg and the vanilla then beat well until fully mixed. Add the pumpkin puree and beat again until it’s mixed. Finally, add the flour and beat until completely mixed. The dough will be wet, this is what you want!
  4. Use a tablespoon or medium-sized cookie scoop to drop the cookie dough balls a few inches apart on the cookie sheet. Bake for 10 to 12 minutes or until the tops are set and no longer look wet. Allow to cool on cookie sheet for a few minutes then transfer to a wire rack (so it won’t stick) and let it cool completely before frosting.

Cream Cheese Frosting

  1. Beat together the softened butter and cream cheese in a large bowl until smooth and all of the lumps are gone.
  2. Mix in the powdered sugar then add the vanilla. Beat until smooth and creamy, about 2 minutes. (you may need to add more powdered sugar depending on your preferred consistency)
  3. Once done, frost the cookies and enjoy!

 

Caramel Apple Crispies

Ingredients:

  • 1 or 2 apples (sliced)
  • Carmel drizzle
  • Crushed Peanuts(Other toppings like chocolate chips work too)

Steps:

  1. Slice apples and plate them
  2. Drizzle caramel sauce or whatever you prefer
  3. Crush Peanuts in a zip lock bag but leave them relatively chunky
  4. Sprinkle on top and add any other toppings
  5. Enjoy!

Spooky Popcorn Hands

Materials:

  • Clear Latex glove
  • Microwave Popcorn (or homemade)
  • MnM’s

Steps:

  1. Pop popcorn
  2. Drop MnM’s into each finger
  3. Fill gloves with popcorn
  4. Tie with ribbon at the top to hold everything together
  5. Enjoy!
